Asian Black Bean Pork
The best of the East with no soy sauce or eggs!
Serves 4
4 pork chops
3 tablespoons cooking or olive oil
4 scallions, chopped
1 clove of garlic, minced
1/2 cup balsamic vinegar
2 tablespoons maple syrup
1/3 cup chicken or beef broth (be careful to buy gluten free!)
1 can black beans
1 1/2 teaspoons powdered ginger
salt and pepper to taste
Saute pork chops in oil over high heat until cooked through. Remove to plate and lower heat to medium. Add a little more oil and sauté scallions and garlic in the same pan 1 minute. Add vinegar and scrape any bits of pork from the bottom of the pan. Add remaining ingredients, including liquid from can of black beans. Heat 7-10 minutes, stirring periodically, until thickened a bit. Serve pork chops on rice or noodles, drizzled with sauce.

Peanut Butter Popcorn
A yummy, sweet gluten-, milk- and cane sugar-free treat!
1 1/2 cups peanut butter
1/2 cup honey
2 bags butter-free microwave popcorn
Start popping popcorn according to directions on bag. Heat peanut butter and honey in a sauce pan until peanut butter has melted. When the popcorn is done, pour the peanut butter sauce over it, stirring as you pour, until the popcorn is evenly coated.

Egg, Dairy, Sugar, and Wheat-Free Brownies
Okay, this has some specialty ingredients. But it would be darned near impossible to make brownies without their 4 key ingredients and NOT use a few special ingredients. These are all available at Trader Joe's or most health food stores.
1/4 cup vegetable oil
1/2 teaspoon stevia
2 tablespoons flax seed, ground
3/4 cup sugar free almond or soy milk
2 tablespoon pure cocoa powder
1 cup rice flour
1 teaspoon baking powder (be sure to get gluten-free)
Preheat oven to 325. Combine all ingredients in a bowl and mix until smooth. Pour into greased 8X8 pan. Bake 25-30 minutes.
